Grilled Clams

3 cups Papaals Hot Sauce
1 cup Papaals Mild Sauce
1 stick (1/2 cup) unsalted butter
4-6 lemons
40-60 dozen clams

Prepare Sauce

In a sauce pan, melt butter on low heat (do not burn)
Once melted, add Hot Sauce and Mild Sauce
Heat sauce to a low simmer (do not boil)
Cut lemons in half and add juice to sauce
Reduce heat to lowest setting to keep sauce warm prior to serving
For best results, remove from heat 10-15 minutes prior to serving

Grill Clams

Fill a large pot 3/4 full with clams
Add enough cold water to pot to completely cover clams
Note it's best to have 2 pots to rotate as you empty one pot
Start your outdoor grill to preheat
Once soaking clams open slightly (fresh water will make them open), place clams on grill - orient the clams with one side of the shell down so that they can open without spilling the juices
Grill clams on medium to medium high heat until they open
As they open, remove clams, serve with Sauce, and enjoy!
